This is one of my mil's special recipe.We used to call it as vella sambar.It can be done without sambar powder,chilly powder Instead of that we use coconut paste and green chilly.You can choose any veggies for vella sambar but here i have used okra,egg plant and capsicum.It goes well with hot steamed rice
Ingredients:
Toor dal -3/4 cup
Onion - 1
Tomato - 1
Green chilly- 6 nos
Grated coconut - 1/2 cup
Turmeric powder - 1/2 tsp
Egg plant - 1
Okra - 12 pcs
Capsicum - 1/2
For tempering:
Mustard seed - 1 tsp
Urad dal - 1 tsp
Curry leaves
Asafoetida
For grinding:
Grated coconut
Instructions:
Take a pan add oil,fry the okra untill it get stiff and then transfer to the bowl
Now add the toor dal along with water,close the lid cook until it get mashy
Transfer grated coconut to blender and blend it as a fine paste
Now open the pan add turmeric powder,onion,tomato,green chilly and add some water cook for 5 min
Add tamarind juice and required salt,mix it well
Now add the egg plant mix well along with the dal curry and close the lid let it cook for 5 min
Add the remaining veggies okra and capsicum,close the lid let it cook for 5 mins
Its time to add coconut paste into the pan and mix well,again gonna cook it for 5 mins
Switch it off the flame
Take a another pan add some oil,mustard seed,urad dal,curry leaves and Asafoetida
Now its ready to serve with hot steamed rice
