Chocolate cream biscuit - In my childhood days i love cream biscuits that too particularly i love bourborn biscuits,so today I had a thought to make chocolate cream biscuit with simple chocolate butter cream.All you need is hand mixer,it will help to ease out the procedure.Its a super good idea to make for kitty parties.Do the same measurement which I used here to get the same result.Try this recipe at your kitchen and let me know how it turned out for you.

NAN KATAI BISCUIT

Ingredients:

For cookie dough:

Unsalted Butter - 1/2 cup
Powdered sugar - 3/4 cup
All purpose flour - 1 1/2 cup
Cocoa powder - 4 tbsp.
Salt - 1 tsp
Baking powder - 1 1/4 tsp
Vanilla essence - 1 tsp
Milk - 2 tsp

For butter cream:

Unsalted butter - 1/4 cup
Icing sugar - 1 cup
Cocoa powder - 2 tbsp.
Milk - 1 tsp

Instructions:

1. Take a bowl ,add unsalted butter and powdered sugar beat them well until it become soft and fluffy


2. Add all purpose flour,cocoa powder,salt,baking powder sieve well ,add vanilla essence .Mix them
well using spatula


3. Add a 2 tsp of milk ,mix them well using hand .Make sure to make a soft and smooth dough


4. Rest the dough for about 10 mins


5. Meanwhile preheat the oven at 180 deg.Place a parchment paper on the counter top


6. Take a portion of dough ,gently rolling it and adjust corner cracks for 5 cm dia 


7. Place the another parchment paper on the top ,roll it down like thin sheet


8. Take out the parchment paper ,cut the uneven edges


9. Cut them like rectangular shapes ,Take any thin stick and make a small hole 


10. Sprinkle some sugar over the top


11. Transfer it to the baking tray.Bake this about 15 mins at 180 deg


12. For cream, take a bowl, add butter beat them well using hand mixer until it become soft and pale color

13. Add icing sugar little by little at a time


14. Add cocoa powder and milk mix them well using hand mixer,cream is ready


15. After 15 mins take the biscuits out and let it allow to cool it for 10 mins


16. Once it cool down,take a biscuit spread the cream gently, take the other one to cover and press it gently


17. Repeat the process for the remaining biscuits
18. Yummy chocolate cream biscuit is ready

Ela adai/kolukatai - This recipe is very much familiar in kerala cuisine.Speciality of this recipe is which fully made with the help of freshbanana leaf.It is very healthy snack for kids and adults because its completely done with steaming process so no oil healthy snack recipe.All we need is rice flour,jaggery and coconut with these simple ingredients u can make it in just 30 mins.Some people used to add sugar instead of jaggery if u want to taste the traditional ela adai/kolukatai then try with jaggery that taste really good if u like cardamon then add a pinch to it.I skipped cardamon because my hubby doesnt like the flavour.i will share detailed pics and video right below check out.Try this yummy healthy snack recipe at your kitchen and let me know how it turned out for you.
      According to my measurement u can make 5 to 6 large size ela adai/kolutai.Already i have posted some healthy snacks recipe i will share my link right here

SWEET PANNIYARAM

Ingredients:

Rice flour - 1 cup
Sherdded coconut - 1/2 cup
Jaggery - 1/2 cup
Water - 1/8 cup
Salt as required
Banana leaf - 5 to 6

Instructions:

1. Take a bowl add rice flour,salt mix it well. Add little by little water to make it as soft dough


2. Cover it with wet cloth,let it rest it for 10 mins
3. Take a pan,add jaggery and enough water.Stir continuously until it completely melts


4. Filter the jaggery syrup inorder to remove the impurities


5. Pour the filtered syrup to the same pan,add shredded coconut mix them well until it gets dry


6. Let it allow to cool down for 5 mins


7. Take a banana leaf just pat it slightly in a flame so that it can easily fold


8. Take a small portion of rice flour,flatten gently using fingers
9. Place a two tbsp of coconut mixture to the centre 


10. Gently press it to the other side,do the same process for the remaining dough


11. Once all done,steam it for 10 to 15 mins in a idly steamer


12. Ela adai/kolukati is ready to serve

MIL'S RECIPE Chicken kulambu - Today i will show my mil style chicken kulambu.I m so happy that i m going to share my mil's recipe she is a great cook. Its a quite long process to make this kulambu just give a try to this recipe you will also like it .She can add potato along with this kulambu that taste will be out of the world.Before marriage i didn't know that much to cook chicken recipes,after marriage my mil taught me nicely this recipe.At that time i also felt that its a big process but afterthat i never ever tried any different chicken kulambu recipe.Here in finland my friends really liked this recipe so i thought to share this yummy and tasty recipe.All you need is very simple and basic ingredient which we usually have it in our kitchen

Chicken curry with homemade spices

Hyderabadi chicken dum briyani
Chicken tikka kebab

Ingredients:

Chicken - 1 kg
Onion - 1 1/2 
Tomato - 1 1/2
Green chilly - 2
Bay leaf - 2
Cinnamon stick - 1/2 inch
Star anise - 1
Cloves - 3 
Kalpasi - 1 tsp
Ginger garlic paste - 2 tsp
Yogurt - 1 tsp
Turmeric powder - 1/2 tsp
Water - 1 cup
Potato - 1(cubed)
Fennel seed - 1/2 tsp
Curry leaves
Kulambu powder (Mix of coriander and chilly powder ) - 2 tbsp
Salt and oil as required

For grinding:

Coconut - 1 cup
Fennel seed - 2 tsp
Cumin seed - 1 1/2 tsp
Pepper powder or whole pepper - 1 tsp

Instruction:

1. Take a pan,add some oil and whole spices like bay leaf,cloves,cinnamon,star anise,kalpasi,Saute until it turns aromatic


2. Add green chilly and sliced onion,saute until it become translucent 


3. Add ginger garlic paste saute until raw smell go away


4. Add sliced tomato saute until it become soft 


5.Now its time to add chicken,turmeric powder and required salt.Mix them well


6. Add a cup of water,mix it well.Close lid let it cook for 10 mins in a medium flame or chicken half cooked


7. Transfer to the bowl,Take a blender add coconut,fennel seed,cumin seed,pepper,blend it as fine paste


8. Add that coconut paste to the chicken soup,mix them well and add kulambu powder,salt as required


9.Take a same pan,add some oil once the oil heats,add fennel seed and curry leaves


10.Add onion,ginger garlic paste and tomato saute until it become soft and mushy


11.Now its time to add that chicken curry to the kadai


12.Add potato and mix them well and close the lid


13.Let it allow to cook about 15 mins in a medium flame


14.After 15 mins add chopped coriander leaves and mix them well


15.Yummy MIL'S RECIPE is ready to serve
