Dum briyani is famous in hyderabadi cuisine.It can be layered with rice,chicken curry,fried onions,mint leaves,coriander leaves it gives spicy and great flavourful chicken briyani.Twice in a month i usually cook this recipe in my kitchen.It can be served with raita,boiled egg.Try this flavorful and spicy recipe and let me know how it turned out for you,
Ingredients:
For chicken marination:
Chicken - 400g
Turmeric powder - 1/2 tsp
Chilly powder - 1 tsp
Briyani masala - 1 tsp
Ginger garlic paste - 1 tbsp
Yogurt - 3 tbsp
Lemon juice - 2 tbsp
Salt as required
For flavorful rice:
Basmati rice - 1 1/2 glass
Bay leaf - 1
Cinnamon stick - 1/2 inch
Cloves - 2
Mint leaves - 1 tbsp
Ghee - 1 tbsp
Salt as required
Fried onions:
Onion - 1 (sliced)
Oil - 4 tbsp
For briyani:
Ghee - 1 tsp
Onion - 1 ( sliced)
Whole spices

Instructions:
Wash and clean the chicken
Soak the basmati rice about 30 mins
For chicken marination,add chicken,turmeric powder,chilly powder,briyani masala,ginger garlic paste,yogurt,lemon juice,salt as required.Mix it well,let this sit for 1 hour
For fried onion,add oil in a pan once oil heats add the onion saute well until it reaches golden brown color and keep it aside
For flavoured rice,take a pan add enough water,bay leaf,cinnamon stick,cloves,mint leaves,ghee,enough salt.add basmati rice
Once its half cooked,strain the water and keep it aside
For briyani,add ghee,whole spices,onion saute well until it become translucent
Now add the marinated chicken,mix it well let it cook for about 10 mins in a medium flame
After 10 mins add chopped mint leaves and coriander leaves,mix it well again let it cook foir about 10 mins
Now sprinkle fried onion and half cooked basmati rice.Spread evenly over the surface
Again sprinkle fried onion,mint leaves,coriander leaves,food color(optional)
Close the lid,place the tawa pan let it dum cook for about 20 mins in a medium flame
After 20 mins,flavourful dum chicken briyani is ready to serve enjoy with raita or boiled egg
