I have learnt this recipe from one of my friend.It is popular dish in andhra cuisine.For stuffing i have used sesame seed,coconut,peanuts.It is very flavorful and mild dish.It goes well with hot steamed rice.Gonna share step by step pictures and videos to cook easier right below
Ingredients:
1. Brinjal - 5 nos
2. Onion - 2
3. Tomato -1
4. Cumin seed - 1tsp
5. Fenugreek seed - 1/2 tsp
6. Curry leaves
7. Chilly powder - 1 tsp
8. Turmeric powder - 1/2 tsp
9. Cumin powder- 1/2 tsp
10. Garam masala - 1/2 tsp
11. Jaggery - a pinch
12. Salt and oil as required
For stuffing:
1. Sesame seed - 2 tsp
2. Coconut - 1 cup
3. Peanuts - 1/4 cup
4. Chilly powder- 1/2 tsp
5. Salt to taste
Instructions:
For stuffing,Take a pan dry roast sesame seed,coconut,peanuts,chilly powder,salt roast in a medium flame
Add turmeric powder,chilly powder,coriander powder,cumin powder,garam masala powder saute well for few mins
