Stuffed Brinjal Curry



I have learnt this recipe from one of  my friend.It is popular dish in andhra cuisine.For stuffing i have used sesame seed,coconut,peanuts.It is very flavorful and mild dish.It goes well with hot steamed rice.Gonna share step by step pictures and videos to cook easier right below

Ingredients:

1. Brinjal - 5 nos
2. Onion - 2 
3. Tomato -1
4. Cumin seed - 1tsp
5. Fenugreek seed - 1/2 tsp
6. Curry leaves
7. Chilly powder - 1 tsp
8. Turmeric powder - 1/2 tsp
9. Cumin powder- 1/2 tsp
10. Garam masala - 1/2 tsp
11. Jaggery - a pinch
12. Salt and oil as required

For stuffing:

1. Sesame seed - 2 tsp
2. Coconut - 1 cup
3. Peanuts - 1/4 cup
4. Chilly powder- 1/2 tsp
5. Salt to taste


Instructions:

Wash and clean the brinjal,cut this into x shape


Soak in water for 10 mins


For stuffing,Take a pan dry roast sesame seed,coconut,peanuts,chilly powder,salt roast in a medium flame



Transfer to a blender,blend it as a coarse powder


Now stuff the brinjals


Take a pan,add some oil once oil heats add onions saute well until translucent


Add ginger garlic paste saute well until raw smell goes


Add tomato saute well until soft and mashy


Add turmeric powder,chilly powder,coriander powder,cumin powder,garam masala powder saute well for few mins


Now blend this as fine paste



Take a pan,add some oil,place the stuffed brinjal and fry it til it half cooked.And keep it aside



In the same pan add cumin seed,fenugreek seek,curry leaves


Add onion saute well until it become translucent


Now add the onion tomato paste,salt and tamarind water



Mix them well now add fried brinjal and some jaggery


Mix it well,let it cook for 5 mins in a medium flame



Now its ready to serve with hot steamed rice
