Puff pastry sheet



Sweet or savory pleasing dishes whenever inspiration strikes. It takes quite long time time to make this tiny thin layered puff pastry sheet. The only important thing for this recipe is butter always stay cool.Once you made this sheet you can make several varieties of desserts and english breakfast recipes. Ingredients:

Maida dough:

Maida/all purpose flour - 2 cup
unsalted butter - 2 tsp
Salt - 1 tsp
Sugar - 1 tsp
Unsalted butter - 400 g
Salt as required

Butter dough:

Butter - 400g
Maida - 1/2 cup
Salt as required
Lemon juice - 1 tsp

Instructions:

Keep the butter cold,the butter in puff pastry presents a bit of challenge,you want it to be cold so it stay solid and doesnt melt into the dough,so that it can be rolled out without breaking into pieces

Take a bowl grate 400g butter,add one cup of maida/all purpose flour,lemon juice,salt as required



Mix them well,make it as square shape and put it in a fridge for 15 mins


Another bowl,add 2 cup maida/all purpose flour,sugar,salt,2tsp of unsalted butter


Mix them well,make it as smooth and soft dough


Put in a fridge let it rest for 15 mins


Now take both the dough,firstly place the full maida dough roll it as a 1 cm thick sheet


Now place that butter dough in the centre cover the dough on four sides,Now let it rest for 15 mins in fridge



After 15 mins,roll them as a 1 cm thick sheet and folding it up again


One round of rolling out and folding up its so called turn


You have to do same process for about 6 times in total
Make sure always butter stays cool,refrigerate the dough for every 15 mins in every turns
If you think that butter is melting slightly thats a sign that the butter is warming up too much so you should refrigerate more frequently 
Some butter start to pop up so at that time just sprinkle some flour over it pat it with your finger and carry on doing the process
Now the pastry sheet is ready:-)
