Keerai kootu - Kootu is generally  made with moong dal but some people used to make with toor dal also.Today i have shown how to make kootu using moong dal its very very simple and easy recipe.Moong dal is rich in protein so its good for kids also.If you really bored or lazy to make to seperate curry and side dish then give a try to this recipe.It really goes well with hot steamed rice.Try this simple and healthy dish at your kitchen and let me know how it turned out for you
       I have tired with palak keerai which is usually available in our place.But you can try with arai keerai,mulai keerai,murunga keerai with the same procedure

Ingredients:

Keerai - 1 cup
Moong dal / pasiparupu- 1/2 cup
Turmeric powder - 1/2 tsp
Onion - 1
Tomato - 1
Garlic - 4 nos
Green chilly - 2
Chilly powder - 1/2 tsp
Coriander powder - 2 tsp
Salt and oil as required

Spice powder:

Channa dal - 1 tbsp
Toor dal - 1 tbsp
Mustard seed - 1/8 tsp
Fenugreek seed - 1/8 tsp
Dry red chilly - 2
Coriander seed - 1 tbsp
Cinamon stick - 1/8 inch
Cloves - 3

Instructions:

Add moong dal,required water and turmeric powder.Pressure cook this about 1 whistle in a medium flame



Take a pan,dry roast the ingredients channa dal,toor dal,mustard seed,fenugreek seed,dry red chilly,coriander seed,cinnamon stick,cloves roast until golden brown color


Transfer to the blender,blend it as fine powder and keep it aside


In the same pan,add some oil,once oil heats add green chilly and garlic saute until it turns aromatic


Add onion,saute for 5 mins or  until it become translucent


Add tomato,saute until it become soft and mashy


Now its time to add chopped spinach mix it well 


Close the lid let it cook for 5 mins or until the leaves get shrink


Now add the spice powder chilly powder and freshly ground spice powder saute for 2 mins


Add cooked moong dal and required salt.mix all together,Let it cook for 10 mins in a medium flame


For seasoning,take a pan add some oil once oil heats add mustard seed,urid dal,dry chilly once it splutter add it to the keerai kootu mix them well


Keerai kootu is ready to serve

Mushroom briyani - Its one of my favorite veggie. Don't over cook these veggies its good to eat with crunchy texture. It is good source of protein,calcium and also it helps to lose weight and high cholesterol. Include these veggie once in a week. Its good for adult as well as kid. I have cooked this flavorful briyani in coconut milk instead of water.If you cook with same ingredient which i have used here definitely u will get a same super delicious result. MUSHROOM MATTAR RECIPE,MUSHROOM PEPPER FRY,SIMPLE MUSHROOM GRAVY

Ingredients:

Mushroom - 1 cup
Capsicum - 1/2 cup
Onion - 1
Tomato - 1
Ginger garlic paste - 1 tbsp
Green chilly - 2
Chilly and coriander powder - 2 tbsp
Turmeric powder - 1/2 tsp
Mint leaves - 1/2 cup
Coriander leaves - 1/2 cup
Soaked basmati rice - 1 1/2 cup
Coconut milk - 2 cup
Cinnamon stick - 1/2 inch
Bay leaf - 1
Cloves - 4
Star anise - 1
Fennel seed - 1 tbsp
Ghee - 2 tbsp
Salt as required

Instructions:

Soak basmati rice for half an hour
Take a pressure cooker,add ghee,once ghee heats add cinnamon,bay leaf,cloves,star anise and fennel seed saute for 1 min


Add green chilly and onion saute until it become translucent


Add ginger garlic paste saute until raw smell go away


Add tomato,saute until soft and mushy.Its time to add spice powder turmeric powder,salt and chilly powder.Saute well for 2 min


Add mushroom,capsicum saute well for 2 min,Add mint leaves,coriander leaves saute saute until it turns aromatic



Its time to add basmati rice,gently mix well



Add 2 cup of coconut milk,check salt before closing the lid


Pressure cook this about 1 whistles in a medium high flame


After pressure release open the lid


Mushroom briyani is ready to serve

Egg Avial - We all know that avial is very famous in kerala. They used to cook in coconut oil and fresh curry leaves gives extra flavor to this recipe. It is a thick mixture of coconut and any vegetables like drumstick,potato,raw banana.elephant yam,carrot,beans,cauliflower. But today i give it a try to different form i made this avial recipe with egg and drumstick. Specialty of egg avial recipe is instead of boiling the egg here i have steamed the egg it gives so soft and juicy eggs in output.It really goes well with simple tomato rasam,hot steamed rice

 POACHED EGG DROP CURRY
EGG OMELETTE CURRY

Ingredients:

Eggs - 4
Grated coconut - 1/2 cup
Onion - 1/2
Green chilly - 2
Dry red chilly - 1
Cumin seed - 1 tsp
Mustard seed - 3/4 tsp
Curry leaves
Drum stick - 2 stick
Coconut oil 
Required salt

Instructions:

Take a bowl,add eggs,salt beat them well 


Any bowl type plate,grease with oil. Transfer egg mixture to the plate and place in a idly steamer,Let it steam about 10 mins


Take a blender jar,add coconut,onion,green chilly,dry chilly,cumin seed. Blend it as fine paste


After 10  mins open the steamer,transfer it to the cutting board


Scrape the edges,gently take it out from the plate. Cut them into any required shapes and keep it aside


Take a pan,add coconut oil once the oil heats add mustard seed and curry leaves


Now add coconut paste,turmeric powder mix them well 


Add drumstick,salt and enough water mix them well. Close the lid let it cook for 10 mins in a medium flame



After 10 mins open the lid,now its time to add steamed eggs


Gently mix well,again close the lid. Let it cook for another 2 mins.Finally add coconut oil and curry leaves


Egg avial is ready to serve

Okra Dal Masala - This recipe originates from south india it is quite differ from kootu. It really goes well with chapathi,dosa,hot steamed rice. Simple recipe with very simple india spice powder which we usually have it our kitchen. You can make it in half an hour usually okra can cook quickly. Mostly all kids doesnt eat veggies but try this version  you Kids going to love this recipe.kids loving recipe try this delicious recipe and let me know how it turned out for you

Ingredients:

Moong dal - 1/2 cup
Onion - 1 (medium)
Tomato - 1/2
Okra / ladies finger - 25 nos
Ginger garlic paste - 1/2 tsp
Turmeric powder - 1/2 tsp
Chilly powder - 1/2 tsp
Grated coconut - less than 1/2 cup
Fennel seed - 1 tsp
Tamarind juice - 2 tbsp
Curry leaves 
Vadagam - 1/2 tsp (optional)
Salt and oil as required

Instructions:

Take a pressure cooker,add washed moong dal,turmeric powder

Add enough water let it pressure cook this about 2 whistles and keep it aside


Take a pan,add some oil saute okra for 2 mins or until stickiness go away



In the same pan,add some oil once oil heats add vadagam and curry leaves


Now add sliced onions,saute for 2 mins or until it become translucent


Add ginger garlic paste saute until raw smell go away


Add tomato saute until soft and mushy


Its time to add spice powder chilly powder and required salt saute for 1 min


Add tamarind juice mix well let it cook for 2 mins


Now add the half cooked okra saute well,add moong dal mix them well let it cook for 5 mins in a medium flame




Take a blender,add grated coconut, fennel seed blend them as fine paste


Its time to add coconut paste to the masala,mix it well let it cook for 10 mins in a medium flame


Okra Dal Masala is ready to serve
